The spirit of the cuvée / Blend of two confidential Loire varietals for a petnat
which reveals the spices of Pineau d'Aunis and the
roundness of Grolleau Gris.

 

Appellation / Vin de France


Grape varieties / 60% Grolleau Gris and 40% Pineau d'Aunis

 

Soil / Sand and gravel on black shale

 

Vine / organic farming in the process of certification, spontaneous grassing, development of agroforestry on the estate, manual harvest

 

Wine / Direct pressing, cold stalling, indigenous yeasts, sparkling with around 15 g / liter of residual sugar. No dosage.

Soil / Two plots: clay on black schist at mid-slope and gravel

Grape varieties / Chenin 100% on black schist at the top of the hill

Vine / Organic farming, full tillage, manual harvest

Wine / Co-fermentation of the two plots, indigenous yeasts, Malolactic fermentation, aging 80% in vats and 20% in barrels

The spirit of the cuvée / Make a white wine from the South-West with the aromas of Sémillon, freshness and bitters by maceration of sauvignon and chenin

Appellation / Bergerac

Grape varieties / 50% Sémillon 30% Sauvignon 20% Chenin

 

Ground / Upper Terrace of the Dordogne Valley

 

Vine / Integral tillage, only organic fertilizers for 20 years, sowing of green manures every autumn, organic farming in the process of certification, phytotherapy (thanks in particular to the aromatic and medicinal plants cultivated on the estate)

Wine / Sauvignon maceration for 48 hours, very gradual direct pressing for Sémillon and Chenin, indigenous yeasts, 20% of the wine aged in barrels of 4 wines for 6 months without topping, aging on fine lees.
